Maple Blondies

These blondies are chewy, yet melt in your mouth, and left my kitchen smelling, in a word, delightful.

The original recipe for these chewy, melt-in-your-mouth blondies is from Far From Normal, found via Pinterest.


Recipe

Ingredients

  • 1 Cup Maple Syrup (the real stuff, not pancake syrup that you buy at the supermarket)

  • 1/2 cup Cup Brown Sugar (I used light brown)

  • 1 Large Egg

  • 6 tbsp Unsalted Butter, melted

  • 2 tsp Vanilla (I used imitation vanilla flavor but I'm sure pure is better)

  • 2 Cups All Purpose Flour

  • 1/2 tsp Baking Powder

  • 1/4 tsp Salt

Directions

1. Preheat oven to 350 and grease an 8x8 or 9x13. (I used a glass 9x13 but would recommend 8x8 for thicker blondies.)

2. Reduce the maple syrup. In a small pan bring the syrup to a boil over med/high heat.  Make sure you keep a close eye on it, once it boils it will foam up (see picture above) and may boil over. Stir or reduce the heat a little if it does this. Keep it boiling for about 10 minutes, 1/4 cup should be evaporated.  Remove it from the heat to cool.

3. In a large mixing bowl combine your butter, egg, vanilla, brown sugar, baking powder and salt. I used a stand mixer fitted with a paddle attachment but this can easily be done by hand.

4. Mix in flour and maple syrup alternating and stirring well. Once everything is well combined pour it into your prepared pan.

5. Bake for 30-35 minutes or until a toothpick comes out of the center clean. It should be a nice golden brown color.

6. Let cool completely… or as long as you can. Cut and enjoy! Serve alone or with vanilla bean ice cream.
