The MOST Amazing Chocolate Layer Cake

The photos are messy but don't let them fool you. This is the best chocolate cake I have ever had.

One Friday night I was chilling at home when I was struck with the sudden urge to bake. I looked in the cupboard to see what ingredients I had and with a quick Pinterest search came across this recipe from The Stay At Home Chef which claimed to be "The Most Amazing Chocolate Cake." I was skeptical but I had all of the ingredients and it had a five star rating with 500+ reviews.




The title was NOT misleading. This was the best chocolate cake I have ever had. It tastes like what I imagine the chocolate cake in Matilda tastes like and was nearly as big. Seriously, this thing is huge!


I had some left over vanilla buttercream in my fridge and decided to "tint" it light pink but added too much food coloring and it ended being an obnoxious bubble gum pink shade. Despite the look, it was crazy good and will forever be my go-to chocolate cake recipe.


Ingredients


  • Butter and flour for coating and dusting the cake pans

  • 3 (450g) cups all-purpose flour

  • 3 (650g) cups granulated sugar

  • 1 1/2 (155g) cups unsweetened cocoa powder

  • 1 tablespoon baking soda

  • 1 1/2 teaspoons baking powder

  • 1 1/2 teaspoons salt

  • 4 large eggs

  • 1 1/2 cups (350 ml) buttermilk (you can make a buttermilk substitution by combining regular milk and lemon water. Recipe here.)

  • 1 1/2 cups (350 ml) warm water

  • 1/2 cup (115ml) vegetable oil

  • 2 teaspoons vanilla extract

Instructions


  1. Preheat oven to 350 degrees.

  2. Butter three 9-inch cake rounds. Dust with flour and tap out the excess.

  3. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.

  4. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.

  5. Divide batter among the three pans. I measure the batter on a scale to make even layers

  6. .Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.

  7. Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.

  8. Frost with your favorite frosting and enjoy!
